Adapted from The Pump Energy Food (which I recommend highly as healthy and tasty)
Ingredients
- 1 skinless chicken breast
- 3 tablespoons chopped cucumber
- 2 tablespoons chopped tomato
- 1 tablespoon minced onion
- 1/4 cup tahini dressing (see below)
- 2 tablespoons soy sauce (to taste)
- 1 tablespoon hot sauce (to taste)
- 2 oz whole wheat pasta (e.g., fettucccine)
Directions
- Cook pasta in boiling water, as typical
- Broil or otherwise cook chicken breast, then chop into bite-sized pieces
- In saucepan, combine all other ingredients. Simmer until the tomatoes break down into sauce, about 15 minutes if I recall correctly.
- Combine cooked pasta, chicken bites, and sauce mixture.
Tahini dressing
Blend the following:
- 1 cup cooked Cannelli beans (ie great northern beans)
- 1.5 cups water
- 1/4 cup tahini paste (this stuff)
- 1/4 cup white wine vinegar
- 1/4 cup lemon juice
- 2 teaspoons lemon zest
- 1/4 cup parsley
- 1 clove crushed garlic
- 1 minced shallot
